Das bekannteste Gemälde von Bonheur zeigt den in Paris gehaltenen Pferdemarkt auf dem baumgebundenen Boulevard de l’Hôpital, in der Nähe des im linken Hintergrund sichtbaren Asyls von Salpêtrière. Für ein Jahr lang skizzierte Bonheur dort zweimal pro Woche, gekleidet als Mann, um Aufmerksamkeit zu entmutigen. Bonheur war als Tiermaler gut etabliert, als das Gemälde auf dem Pariser Salon von 1853 debütierte, wo es großes Lob erhielt. Bei der Ankunft in der endgültigen Schemata inspirierte der Künstler George Stubbs, Théodore Gericault, Eugène Delacroix und alte griechische Skulptur: Sie bezeichnete die Pferdemesse als ihre eigene "Parthenon frieze".
